A legit quick and so easy recipe – my Mom has been making something similar to this since I was in high school. A perfect family pleaser.
Ingredients:
1 bag (12 oz) of raw shrimp (tail on or off is your preference – I do tail-on just because it makes me shovel this in my mouth at a slightly slower pace)
2 Tablespoons extra virgin olive oil
1 shallot or 2 garlic cloves – finely chopped
1-14.5 ounce can petite diced tomatoes (you can substitute tomato sauce if you like yours less chunky)
Juice of 1/2 lemon
12 ounces of feta
Noodles or zoodles
Parsley to garnish
Directions:
Sauté shallot or garlic in olive oil. Once garlic or shallot is translucent add shrimp – cook to rare (gray is gone but still rare in the middle). This might take two rotations of shrimp depending on shrimp and pan size. Reserve.
Add tomato and juice of half lemon to pan. Allow to simmer.
Add shrimp back in and finish cooking, add feta when almost fully cooked (this allows the feta to warm, but hold its structure.)
Serve over pasta, zoodles – or just eat plain. Garnish with parsley. Eat with a chunk of crusty french bread for the extra sauce.
