If you were wondering how many beautifully (and weirdly) complimentary flavors you could pack into a tiny sandwich that stands alone as a miniature celebration of life and gastronomy – now you know.
Ingredients –
1 can biscuits (Can you make your own? Yes. Get it, if you have the energy.)
Tub pimento cheese (Yes, you can also make your own, but again, I’m tired.)
Thick cut bacon of your choice (I went with a fancy sun-dried tomato peppered bacon but literally any kind will do)
Cucumber – peeled and sliced thin
Cherry tomatos – sliced in half
1 shallots – sliced thin
1 teaspoon olive oil
2 teaspoons honey
Lettuce
5 Tablespoons mayonnaise
6 teaspoons chipotle peppers (we use canned – if you don’t want to get into this you can just do a Tablespoon of your prefered hot sauce, it won’t be quite the same, but still delicious)
Pinch oregano
Directions:
Bake biscuits according to can/recipe
Cook bacon and cut to smaller (slider sized) pieces
Sauté shallot in olive oil and when almost translucent, drizzle honey on it. Continue cooking until soft.
Mix mayonnaise, chipotle, and oregano in blender or food processor.
Assemble (our order was – bottom biscuit, pimento cheese, cucumber, bacon, shallot, tomato, lettuce, mayo, and top biscuit) and eat. Wow.
